A friend bestowed 4 dozen fresh quail eggs this week. I wanted to make sure they end up in delicious recipes.
I
know that it can be a little time consuming to peel all those quail
eggs, but oh the flavor.
Quail eggs have a rich egg flavor perfect for a
robustly flavored egg salad.
Quail egg salad
3 dozen quail eggs (hard boiled and peeled) or 2.5 cups chopped hard-boiled eggs
1/2 small red onion chopped
1/4 cup cilantro chopped
1/4 cup dill pickle chopped fine ( you can use sweet pickle relish as well)
1/2 cup mayonnaise
1 tsp. Dijon Mustard
1 Tablespoon hot sauce
1/2 teaspoon celery seeds
1/4 teaspoon smoked paprika
1/8 teaspoon cayenne pepper
salt and pepper to taste
To cook the quail eggs, place the clean eggs is a large pot of cold water. Bring to a boil and boil for 3 minutes. Plunge cooked quail eggs into ice cold water until cool and then peel.
Add the rest of the ingredients and mix.
Easy as that!
