 Directions

Spray large 6 muffin pan with cooking spray and place a teaspoon of butter in each cup.

Place 1 beaten egg in each muffin cup.

Add your meat of choice to each muffin cup. Season with your choice of seasoning. I like Mrs. Dash Southwestern Chipotle and a little Sriracha Sauce.

Add Chopped fresh spinach to each muffin cup.

Top each with your choice of shredded cheese.

Bake in preheated 375 degree oven for 20 minutes or until golden brown.

Remove from oven and with a butter knife release the individual omelets from the pan and lean them up on their sides to cook.
Place in zip lock sandwich bags and refrigerate until needed.

I hope you enjoy making these and eating them. Experiment with different vegetables, cheeses, meats, seasonings!
