We visited the Canton Farmers Market this morning on the square in downtown Canton. Lots of great vendors with fresh produce, baked goods, jams and jellies and canned foods, crafts, and delicious prepared foods. Work the trip. Easy parking and access to the market. A beautiful Saturday morning!

Summer is time for Delicious Collard Wraps
This is a healthy raw vegan way to eliminate the extra carbs found in flour tortillas and bread by using fresh large collard leaves for your veggie wrapper. This recipe is extremely easy to make and the crunch of the fresh vegetables and collard leaves will satisfy any appetite. Most people think the only way you can eat collards is cooked to death with a lot of fat and salt, but they are delicious raw as a wrapper for vegetables and your favorite hummus or spread.
Ingredients
3-4 Collard
Greens
1 small cauliflower head, raw or steamed
1 large avocado
3 limes, juice
2 large carrots, julienned
1 cup jicama, julienned
1 small zucchini, julienned
1 tsp. dried Italian herb mix (oregano, rosemary, thyme..)
1/4 cup fresh cilantro, finely chopped
1 medium slice red onion
1 small cauliflower head, raw or steamed

Directions
Place cilantro,
cauliflower, 1/2 avocado, 1/2 tsp. dried herbs, juice from 1 lime and red onion
in food processor until you have a creamy puree. Spread over collard greens and
top with jicama, zucchini and carrot slices. Roll and close.
For the sauce, blend 1/2 avocado, 2 limes (juice), 1/2 tsp. dried herbs and more cilantro until creamy. You can more lime juice if necessary or a tiny bit of water.
Serve wraps with dipping sauce and bring anywhere you go. This will take around 20-30 min to prepare.

You can also add your favorite goat cheese, hummus, tahini, pesto, sundried tomato sauce...you get the idea.

Spring and Summer Market Season 2018
Many cities in the spring and summer are gearing up their weekly markets with a bounty of freshly harvested produce, Fresh eggs, baked goods, specialty products, prepared foods, soaps and cosmetics, pet snacks and much much more!
We visited the Jasper Farmers Market in Jasper GA in Lee Newton Park (Each Saturday Mornings usually starting at 7:00 and open until afternoon.)
We also visited the Woodstock Farmers Market in Woodstock GA (Each Saturday, May through October, held in Downtown on Market Street between Mill and Maple Streets adjacent to the Elm Street Arts Village event green from 8:30 am until Noon.)
Visiting these markets are so much fun and an opportunity to make friends with the local artisans that produce great food and hand crafted products.

Keto Eggie Omelet Recipe (Individual Hand Held Omelets)
Making a healthy keto breakfast for an on-the-go lifestyle is easy if you make these delicious "Eggie" Hand Held Omelets. You can make them ahead of time for the week and have them in the refrigerator ready to grab and go. This is one of my most requested recipes and the basic steps for preparation, you can customize it to include your favorite ingredients.

Prep Time 15 min
Cook Time 20 Min
Preheat Oven to 375 degrees
Ingredients
Canola or Olive Oil Cooking Spray
6 Large Eggs
6 tsp Salted Butter
3 Cooked Sausage Patties (cut into
small dice) or 6 Strips Cooked Bacon (crumbled)
Seasoning of your choice or Sriracha
Pepper Sauce
4 oz. Chopped Spinach
4 oz.
Shredded Cheese of your choice
Per Serving
Total Carbs 3g
Total Calories 250
Directions
Spray large 6 muffin pan with cooking spray and place a teaspoon
of butter in each cup.
Place 1 beaten egg in each muffin cup.
Add your meat of choice to each muffin cup. Season with your choice of seasoning. I like Mrs. Dash Southwestern
Chipotle and a little Sriracha Sauce.
Add Chopped fresh spinach to each muffin cup.
Top each with your choice of shredded cheese.
Bake in preheated 375 degree oven for 20 minutes or until
golden brown.
Remove from oven and with a butter knife release the
individual omelets from the pan and lean them up on their sides to cook.
Place in zip lock sandwich bags and refrigerate until needed.
